Texas is a country within a country. At 700,000 square kilometres — nearly three times the size of the UK — it contains deserts, mountains, coastline, prairies, and forests. The culture is equally vast: the live music capital of the world (Austin), America's finest BBQ, Tex-Mex cuisine, and a pride of place that borders on religion.

Practical Notes

BBQ

Texas BBQ is a religion. The essentials:

  • Brisket — the king. Smoked for 12–18 hours over post oak. If it needs sauce, it's not good brisket
  • Beef ribs — enormous, each rib the size of your forearm
  • Sausage — hand-stuffed, usually beef and pork
  • Top spots: Franklin (Austin — the queue is the experience), Snow's (Lexington — Saturdays only, arrive at 6 AM), Goldee's (Fort Worth), Micklethwait (Austin — shorter queue)
  • Price: Meat is sold by weight. A full plate with sides runs $20–30

Tex-Mex and Tacos

  • Breakfast tacos are a way of life. Egg, cheese, and your choice of protein in a flour tortilla. Available everywhere from 6 AM
  • Tex-Mex staples: enchiladas, fajitas, queso (melted cheese dip), margaritas. Matt's El Rancho (Austin), Mi Tierra (San Antonio)

Driving

  • Texas speed limits reach 85 mph on certain toll roads — the highest in the US
  • Distances are enormous. West Texas can feel post-apocalyptic: no services for 100+ miles between Marathon and Terlingua
  • Carry extra water and a full tank west of the Pecos River. Mobile signal is non-existent in much of Big Bend country
  • Speed traps in small Hill Country towns are notorious. Drop to posted limits immediately
